Philippine Mango

Mango is the Philippines National fruit, you could see mangoes in fruit stall, groceries, supermarket and even on drive ways all year round. During summer is the best season for mango, it is known to be sweeter on its season though the availability is all through out the year. This fruit can be consume at any how you liked it to. It can be pickled mango, dried mango, baby mango, unripe mango and ripened mango, the taste differs but its still really good and healthy. 

There are 3 most distinct type of mango in the Philippines, we have the so called Carabao Mango which is commonly eaten ripe with a very sweet and delightful taste. It is rich in Phytochemical nutrients, Vitamin B, C and E as well.Carabao Mango is best eaten with Suman (Philippine rice cake/stick wrapped with banana leaf), it is also good toppings for your morning oatmeal or as a desert after your meal.

Another type of Philippine Mango is the Indian Mango, its strange to have its name as Indian Mango right? also called Katchamita. This can be eaten ripe, but best unripe, some likes the young or baby Indian Mango eaten with either salt and pepper or with cooked shrimp paste. This mango grow in anyone's backyard, farm or even just on the road sides, the seed of a ripened mango could easily grow in a good soil. I have about 2 mango tree in my backyard and about 4 in our farm and all were Indian Mangoes. Schools serve this mango to students during their break, which is healthy and light on every bite. Mango seeds usually are hairy or fibrous.

Apple Mango is another type with its lovely red, orange, yellowish and green combination of colors. This type of mango has the same taste as the others, and commonly eaten on the same way, either ripe or unripe. It is cheaper in the market compared to the Carabao Mango.



Some pickle this fruit and some make this as the commonly known Dried Mango which is being exported in other countries, Dried Mango is good and tasty yet this comes with sugar content which is not advisable to consume a lot when eaten, specially for the diabetic consumers. Mango as well is being used as ingredient on some delicacies and salads like Chicken and Mango Salad, Mango Salsa, Mango Misu and Mango Ice cream to name a few.

"Dinakdakan" Ilocano's Best Pork Recipe in the Philippines


Dinakdakan is a term used by Ilocano's as name for this grilled pork recipe. It is a well known recipe in all Ilocano town in the Philippines and has been adapted by other regions because of its delightful taste and easy preparation. We have different ways of preparing Dinakdakan these days, as many make innovative twist on its taste and preparation.



Here are the ingredients you would be needing to cook Dinakdakan, the following needs to be grilled:

Pork's ear (known to be crunchy and chewy)
Pork's nape
Pork's tongue
Pork's liver
Pork's intestine (optional grilled or boiled)

For the seasoning, you would be needing:

Either Lemon, Kalamansi, Lime or Vinegar
Chopped onions
Chopped chilli
Chopped green onion
Salt
Pepper
Pork's brain (boiled)
Mayonaise (optional)

Direction:

1. Grill all the pork parts and boil the pork brain
2. Slice the grilled pork into small desired sizes
3. In a bowl, mix the sliced grilled pork with the boiled pork brain and the rest of the seasoning
4. Balance the seasoning by adding salt and pepper
5. You can mix the mayonaise if the pork brain is not enough but this is optional. You may
    or may not use it depending on your style.
6. Best serve with rice.



Tips:

- In order to enjoy this recipe, it is better to choose pork parts that has less fat on it.
 - It also goes together with beer or any alcohol drink

Simply Amazing HCMC



Ho Chi Minh City is a place where anyone would surely feel the easiness and convenience of life, particularly on the financial aspect, you don’t need to be filty rich to have a good or better life in this city. Salary here is not much compared to other countries, but the cost of living is also different, we can say it is cheaper to live here than any other country or city in this world. Foods, garments, household stuff and other personal necessity is cheap here, as long as you have your own motorbike, you will never worry about the expense of transportation and it will bring you at any point of Ho Chi Minh without spending much on it. 

People are friendly, nice and helpful, they are not self centered, most of them desires to help especially when you are a foreigner in their country. In their spare time, you could see Vietnamese people crowding the Café’s which is located everywhere. Some Café’s are expensive one’s, some are in its normal price and the rest are really cheap just mini Café’s that is put up infront of their homes, or in the streets. Most men drink with a bit loud noise when they cheers each other, but they are not initiating any argument neither fight during their drinking session, it’s  a friendly and peaceful drinking for everyone. Not everyone in this country speaks English, but some of them are good as well. Some are trying just to be friend and able to communicate and help. I experience once, I ate in a Café and there’s only one man who can speak a bit of English, I was very pleased that he really tried to express himself and the information I needed while I was eating in that particular Café, the only thing I noticed is that he was so uneasy and he’s been nervous by the way he stretch his fingers like he is about to passed out, I smiled but I appreciate how he tried being nice to me as a customer. I believe that with confidence of trying to speak English language, will make them more friendly to people.

At work places, shops opens early between 7 to 8 in the morning and closes usually by 10pm. Offices has its 8 hours working schedule everyday and half day on Saturdays. Its really amazing here that during lunch time which is 12 to 1:30 pm, employees are free to go out of their offices or sleep after having lunch. Some of them have their own sleeping mat. Funny right but very comfortable that they can power nap at the middle of their working hours. I was working in one company here and one time I accidentally drop my pen and so I lean downward to reach it, and I was amazed seeing few feet on the floor. And shoes are there too, so that made me feel confused and I smiled. Before I came up with a conclusion about what I saw, I asked some people here who is working in companies too, and they have confirmed that most of them are like that, very comfortable at their work place, that they can be barefooted inside the office, or even folding their legs in their seats. It’s not actually formal compared to a work setting of other countries or companies. Yet as it’s their culture and ways of practice, you may ask why this is being tolerated here? I think maybe because they treat each other as family inside their community or company or they don’t bother how they sit, walk and stand as long as they work accordingly and systematically in their valued company. I didn’t condemn such practice, and as a matter of fact? Laugh at me when I say I am also following their practice which I found very comforting, like you’re just inside your home. I can see it as a point of simplicity in their lifestyle and working style. Not bad, since they all tolerate it and all you have to do is go with it, and adapt what you see for you not to be left behind.

The only problem so far that I encounter in this city, is the crowding of motorbike and other vehicle during rush hour. Most of the vehicle used here is motorbike, very few people uses car to move from one place to another, bus is also available which is very cheap, and taxi which is kind of expensive. But reaching your destination when using four wheel vehicles will delay you a lot. Unlike motorbike where you can maneuver it in small streets to find short cuts. On crowdie days, reaching office and home slows down, especially in the inner city. It is very difficult to cross the road, but you have to be tough to get through. Rules on the road are not much practice here too. Motorbike moves from any direction and you should be attentive enough to move yourself on it. The great thing I noticed here is the maximum tolerance and patience of everyone and the drivers. So am I? well, I really need to, I was been experiencing being pissed off, with the long waits on the crowd street, but later on, I just get used to it since there’s no choice left.

It’s really enjoyable and fun to live here in Ho Chi Minh although I am still having quite difficulty on the language, and in moving around here. It’s not easy to learn Vietnamese language, with every same word with different usage, meaning and accent. I think I really need a tutor to live up here. When it comes to security, I find it more peaceful here. Weather is on its rainy season now until October, so traveling on rainy days is kind of messy to all working people. But when the sun is up, you will not even dare to get burn outside with its hot sizzling heat. Better stay on the shade or grab your umbrella and mask, and make sure you are wearing a jacket or coat to cover you if you’re aren’t ready to get burnt.

Happiness when Shared is Doubled...


As people struggle for survival and success in a highly competitive world, it is easy to neglect personal relationship.Today,technology has shortened the distance between people and across the world,but sadly we are more divided over political idealism and self interest.Individualism weakens the social bonding and undermines the traditional values of love and respect for people.

Let me share with you a story...
Two men, both seriously ill, shared thesame hospital room. One man was allowed to sit up in his bed for an hour each day to help drain the fluid from his lungs.His bed was next to the rooms only window. The other man had to spend all his time flat on his back.

Everytime when the man in the wndow could sit up, he would describe to his roommate all the beautiful things he could see outside the window. There was a park with a lovely lake. Ducks and swans played on the water while children sailed their model boats. Young lovers wlked arms in arms amidst flowers of every color of the rainbow. Grand old trees graced the landscape, and a fine view of the city skyline could be seen in the distance.
As the man by the window described all these in exquisite detail, his roommate would close his eyes and imagine the picturesque scene. He began to live for those one-hour periods when his world would be broadened and enlivened by all the activity and color of the world outside.

One morning, the nurse arrived only to find the lifeless body of the man by the window who had died peacefully in his sleep. As soon as it was appropriate, the other man asked if he could be moved next to the window. The nurse was happy to make the switch. 
Slowly and painfully, the man propped himself on one elbow to take the first look but to his astonishment, saw a blank wall!!!

The man asked the nurse what could have compelled his deceased companiion to describe to him such wonderful things outside the window. The nurse said the man was blind and could not even see the wall. "perhaps he just wanted to encourage you and make you feel happy", she said. 
Despite his own woes and limitations, the blind man kept up his spirit. He brought happiness to others, and in so doing, found a purpose for his own miserable life. Shared grief is half the sorrow, but happiness, when shared is doubled...
